A simple Mediterranean-style orzo bake that's perfect for family dinners. Packed with flavors from mushrooms, sun-dried tomatoes, olives, and topped with mozzarella and parmesan, this dish is both easy to prepare and delicious. Ideal for meal prep, it serves well as leftovers too!

1: Preheat the oven to 425 degrees. 2: In a large baking dish, add olive oil, orzo, mushrooms, sun-dried tomatoes, cherry tomatoes, olives, and garlic. Add the zest and juice of 1 lemon. 3: Add Italian seasoning, salt, pepper, and chili flakes if desired. Add 4 cups of stalk of choice. 4: Cover with foil and bake for 40 minutes to 1 hour, until stalk is about 90% absorbed. Then uncover. 5: Add parmesan cheese and chopped spinach, mix thoroughly. Top with mozzarella and bake for another 5 minutes until cheese is melted and golden. 6: Top with fresh chopped basil and extra chili flakes if desired. Enjoy!
