1: Preheat oven to 425°F (218°C). 2: Prep the chicken and veggies. Slice each chicken thigh into thirds and add into a large mixing bowl, set aside. Mince the garlic, slice the onion, then slice the bell peppers. Add all into the large mixing bowl. 3: Slice 8-10 California Prunes into quarters and add them into the bowl. 4: Into the bowl, add olive oil, taco seasoning, and honey. Mix thoroughly to combine. 5: On a baking tray lined with parchment paper, evenly spread out the chicken veggie mix. Place in the oven and bake for 20 minutes. 6: Meanwhile, prep your toppings: dice the tomato and red onion, finely chop the cilantro, slice the avocado, then limes into wedges. Set aside. 7: After 20 minutes, remove from oven and add shredded cheddar cheese all over. Place back in oven for 3-5 minutes until cheese is melted. 8: Remove from oven and add all toppings. Serve with lime wedges and warmed up tortillas.
