Make the Dressing: 1) In a blender or food processor, add all of the ingredients and blend until smooth. Make the Salad: 1) Start by cooking the edamame beans as per package instructions, and then set aside (typically requires a quick boil). 2) In the meantime, begin chopping all the veggies: thinly slice the red pepper, green and purple cabbage; make carrot ribbons using a peeler; dice the green apple; and chop the green onion and cilantro (or sub parsley if you don’t like cilantro). 3) Assemble the salad by adding all of the chopped veggies into a large bowl, along with the cilantro and sesame seeds. 4) Finally add a whole bag of @threefarmersfoods Sea Salt Lentils. Pour over the tangy peanut-sesame dressing and thoroughly mix to combine!
