If I had to eat one salad forever I think it would be this one. It’s so hearty, filling, and full of nourishment🙌🏽 Perfect to bring for a dinner potluck or to have some lunch prep on hand.

• cook 1 cup of quinoa as per package instructions. I like to season my quinoa while it’s cooking with salt, pepper, paprika, and garlic powder to taste. • cut 1-2 sweet potatoes into cubes, add a touch of olive oil and salt/pepper. Roast in the oven until golden. While the cooking is happening, prep and chop up all your salad ingredients listed below👇🏽 as well as the dressing!
