A deliciously juicy chicken with crispy skin, cooked with baby potatoes, carrots, onions, mushrooms, garlic, and lemon. This one-pot meal is easy to prepare and perfect for holiday cooking.

1: Add potatoes at the bottom of the pot. 2: Follow with the other veggies: carrots, onion, mushrooms, and garlic cloves. 3: Add olive oil, butter, and seasonings (salt, pepper, rosemary, thyme) to taste. 4: Place sliced lemon on top of the veggies. 5: Place the whole chicken on top of the lemon. 6: Cook covered at 180 degrees Celsius for 1 hour. 7: Remove cover and cook at 200 degrees Celsius for an additional 30-40 minutes until the chicken is golden brown.
