1: Using a mandolin (or knife if you don’t have) very thinly slice the potatoes. 2: Let potato slices sit in cold salted water for 20 minutes; drain and pat dry. 3: Bits at a time, fry in 1 inch of hot oil until golden brown; & toss chips in salt/pepper.
