What you need

bunch spinach

red onion

tsp chili flakes

pepper

tomato
tsp salt

tbsp olive oil

cup mozzarella cheese

Instructions
1. Grate the potato and then remove the excess liquid as best as you can by squeezing with your hands. 2. In a pan on medium-high heat, add olive oil, then spread the grated potato out evenly. Add salt, pepper, and garlic powder to taste. 3. Cook covered for 4-5 minutes or until the bottom becomes a bit crispy on the edges (you can add an extra tbsp of olive oil for extra crispiness). 4. Pour the whisked eggs overtop and season once more to taste (add chili flakes here if desired). Put heat down to medium. 5. Cover and cook the eggs for 2-3 minutes. Once they look almost cooked through, add the grated mozzarella. 6. Cover to melt the mozzarella for another 1-2 minutes and finish cooking the egg. 7. Remove from heat, add in your favourite toppings, and flip the half over like an omelette!View original recipe
