Instructions
1) Preheat oven to 425 degrees. Start by cleaning the broccoli stalks. Remove the outer layer with a vegetable peeler (like you would peel a carrot), and then horizontally slice the stalk into 1/2 inch coins, or “nuggets.” Set aside in a bowl. 2) Prep the wet mixture. In a bowl, crack in 3 eggs and add 1/3 cup grated parmesan cheese, mix to combine. 3) Prep the dry mixture. Blend 2 cups of corn flakes until the flakes turn into crumbs - pulse blending method works best - and then add to a bowl. Add in the garlic powder, paprika, Italian seasoning, and chili flakes. Mix to combine. 4) Assemble the broccoli stalk nuggets. One by one, dip the broccoli pieces into the wet mixture, and then press into the dry mixture, ensuring to coat the whole nugget in the seasoned corn flake crumbs. Place each nugget on a baking tray lined with parchment paper. 5) Drizzle a bit of olive oil onto each nugget, and then crack on salt and pepper to taste.
