A simple and healthy dinner for one, featuring air-fried chicken thigh and drumstick with a medley of cubed potato, sliced onion, red pepper, and minced garlic tossed in olive oil and seasonings.

What you need
chicken thigh
oz garlic butter

tbsp olive oil

potato

red pepper

onion

chicken drumsticks

Instructions
1: Add parchment paper into your airfryer, and add the potato, onion, red pepper, garlic, and olive oil. 2: Add all of the seasonings to taste and mix to combine. 3: Place the chicken on top of the veggies, season again, and optionally add a knob of butter on top of the chicken. 4: Place 1/2 a lemon on the side. Air-fry for 25-30 minutes at 200°C. Flip the chicken halfway through and mix the veggies. 5: Serve and enjoy, squeezing the roasted lemon on top.View original recipe
