Instructions
1: In a blender, add the eggs and cottage cheese. Very briefly pulse blend for 1-2 seconds to combine. 2: In a non-stick pan on medium-high heat, add a bit of oil spray. Place down your salami slices, then pour over the egg mixture. 3: Season the egg to taste, sprinkle the chopped spinach over the egg, followed by the cheddar cheese. 4: Carefully place your wrap on top and gently squish down to stick it onto the egg/cheese mixture. Cook for 2-3 minutes. 5: Using a spatula, gently flip the wrap over to the other side and allow it to get crispy for about 1-2 minutes. 6: If desired, add a little extra cheddar cheese followed by the tomato slices. 7: Flip the wrap over like an omelette, remove from the pan, slice into manageable pieces, and ENJOY!View original recipe
