Homemade Sun-Dried Tomato Pasta Sauce

A quick and easy homemade pasta sauce featuring sun-dried tomatoes, fresh cherry tomatoes, and simple seasonings. Perfect for any pasta dish, this sauce is flavorful and can be adapted to be vegan by omitting the cheese.

What you need
tsp salt

tsp chili flakes

tbsp olive oil

pepper

sundried tomatoes

yellow onion
cup pasta water

cup cherry tomato

clove garlic clove
Instructions
1: Add olive oil and minced onion to a pan on medium-high and sauté for a couple of minutes until onions are translucent. 2: Add the cherry tomatoes, mix, then close the lid so the tomatoes get nice and soft for a few minutes. Meanwhile, start cooking your pasta in boiled salted water. 3: Check the tomatoes. If they’re looking soft and the skin has split, add the minced garlic. 4: Using the back of a spatula, smush down each cherry tomato until they burst. 5: Add the seasonings to taste, along with the sun-dried tomatoes, and mix to combine. 6: Finally, add the pasta water and parmesan cheese.
