Instructions
1: Peel the carrots and place them in a baking dish. 2: Preheat the oven to 420 degrees. 3: Drizzle the carrots with olive oil, smoked paprika, salt, and pepper. 4: Add honey to the carrots and toss to coat. 5: Bake in the preheated oven for about 25-30 minutes until soft to touch with a fork, tossing once or twice during baking. 6: Plate the carrots and pour over leftover juices from the baking pan. 7: Top with parsley, cracked pepper, lemon juice, and grated parmesan cheese.View original recipe
