Mediterranean-Style Orzo Bake

Whether you’re cooking for a family or just yourself, this recipe will do the job trust me😆 I had leftovers for days. It takes very little time to prep this and place in the oven, the main time it takes is simply leaving it be in the oven to cook!

What you need

cup mozzarella cheese

cup parmesan cheese

spinach
tsp chili flakes

tsp ground black pepper

tsp salt

tbsp italian seasoning

lemon

clove garlic

black olives
cherry tomato

sundried tomatoes

cup shiitake mushrooms

cup cooked orzo

tbsp extra-virgin olive oil
Instructions
1. Preheat the oven to 425 degrees. 2. In a large baking dish, add the following ingredients: olive oil, orzo, mushrooms, sun-dried tomatoes, cherry tomatoes, olives, and garlic. Then add the zest and juice of 1 lemon. 3. Add the Italian seasoning, salt, pepper, and chilli flakes if desired for a slight kick. Finally, add 4 cups of stalk of choice (veggie, chicken, mushroom, etc). I recommend using pre-boiled stalk so it doesn’t need to take as long to reach a boil in the oven. 4. Cover with tinfoil and bake for 40 minutes to 1 hour (time may vary depending on your oven). When you see that the stalk is about 90% absorbed, that’s when you can take it out of the oven and uncover. 5. Add the parmesan cheese and chopped spinach, and then mix thoroughly to combine. Top generously with mozzarella and place back in the oven to bake for another 5 minutes, or until the cheese is melted and golden on top. 6. Top with fresh chopped basil and extra chilli flakes if desired. Enjoy!View original recipe
