oz bocconcini

red onion

oz baby artichokes

cup sundried tomatoes
oz roasted red pepper

Instructions
1: Bring a large pot of water to a boil and cook the chicken tortellini according to the package instructions. 2: Once cooked, strain and briefly rinse the tortellini under cold water to stop the cooking process, then set aside. 3: Thinly slice the red onion, roasted red peppers, and sun-dried tomatoes if bought in whole form. 4: Slice the bocconcini into bite-sized pieces if needed. 5: Drain the artichokes from the jar. 6: In a large mixing bowl, combine the cooled tortellini, arugula, red onion, bocconcini, artichokes, and roasted red peppers. 7: Add the lemon juice, pesto, pistachios, chili flakes, and cracked pepper to taste. 8: Mix thoroughly, and enjoy!View original recipe
