Instructions
1️⃣ Simple Green Salad: • crunchy lettuce • red onion • cucumber • cherry tomatoes • avocado • parsley • parmesan cheese Add the crispy chickpea crumbs and glowing goddess dressing and you’ll have yourself a 10/10 (not so simple anymore) salad my friends!! 2️⃣ Crispy Chickpea Crumbs (gf): • 2 cans chickpeas, drained and rinsed • 2 tbsp olive oil • 1 tsp salt • 1 tsp pepper • 1 tsp paprika • 1 tsp chili flakes • 1 tap garlic powder I use my airfryer to cook until nice and crispy, at 200* for 12-15 minutes give or take. You can also bake them at 400* until crispy. Once done and crispy, allow the chickpeas to cool off completely before adding them to the blender. Blend until “breadcrumbs” form (pulsing on and off works best, might need to stop and shake the blender once or twice). I like to leave a few whole chickpeas, but you can blend it finely if you want. 3️⃣ Glowing Goddess Dressing: • large handful of spinach • 1/3 cup olive oil • juice of 1 lemon • 1 tbsp honey • 1 tsp minced garlic • 1 tsp dijon mustard • 50g goats cheese • salt/pepper to taste • optional: chili flakes for a kick Simply blend until smooth and store in a jar in the fridge.
