Sweet Potato Stacks

What you need

tsp smoked paprika

cup feta

tsp ground black pepper

tsp crushed red pepper

sweet potato

tsp dried rosemary

cup extra-virgin olive oil

tsp salt
cup grated parmesan cheese
Instructions
1) Preheat the oven to 375 degrees f (or 190 degrees c). 2) Peel the sweet potatoes, then slice them into 1/4 inch coin shapes. Add to a large bowl. 3) Add the olive oil, parmesan, feta, along with all of the seasonings. Mix thoroughly to combine and coat every potato peice. 4) Take a bunch of the slices and stack them up, placing each stack into a muffin tray. You should be able to make 12 stacks (and you can stack them u higher than the muffin moulds if need to use every piece up). 5) Bake for 25-30 minutes, or until cooked through and golden brown on the top/edges. 6) Serve with a squeeze of fresh lemon juice!View original recipe
