What you need

lime

cup shredded cheddar
tbsp honey

oz taco seasoning
clove garlic

cup extra-virgin olive oil

Instructions
1. Preheat oven to 425°F (218°C). 2. Prep the chicken and veggies. Slice each chicken thigh into thirds and then add into a large mixing bowl, set aside. Mince the garlic, slice the onion, then slice the bell peppers (I used a mix of red, yellow, and orange pepper for an extra pop of colour!). Add all into the large mixing bowl. 3. Slice 8-10 California Prunes into quarters and add them into the bowl. 4. Into the bowl, add olive oil, taco seasoning, and honey. Mix thoroughly to combine. 5. On a baking tray lined with parchment paper, evenly spread out the chicken veggie mix. Place in the oven and bake for 20 minutes. 6. Meanwhile, prep your toppings: dice the tomato and red onion, finely chop the cilantro, slice the avocado, then limes into wedges. Set aside. 7. After 20 minutes, remove from oven and add shredded cheddar cheese all over. Place back in oven for 3-5 minutes until cheese is melted. 8. Remove from oven and add all toppings. Serve with lime wedges and warmed up tortillas.View original recipe
