What you need

tsp capers

tsp shallot

tsp garlic

tbsp flat-leaf parsley

tbsp extra-virgin olive oil

balsamic vinegar

baby arugula

goat cheese

pepper

salt

tomato

sourdough bread
Instructions
1) Toast your bread of choice. Meanwhile, in a small bowl mix together all of the ingredients for the tomato dressing. 2) Assemble your sandwich: slather a generous amount of goats cheese onto one side of the bread, then lay tomato slices on the other, and season with salt/pepper. Spoon the “dressing” onto the tomatoes, and then add a small handful of arugula onto the goats cheese side of the bread. Squeeze some balsamic reduction onto the arugula, close the sandwich and slice in half.View original recipe
